Oat Flour Pumpkin Spice Dark Chocolate Pancakes

  • 1 Cup Oat Flour
  • 1/2 Cup Tapioca Flour
  • 1/3 Cup Coconut Sugar
  • 2 Teaspoons Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1 Cup Almond Milk (or whichever you prefer)
  • 1 TBSP Vanilla
  • 1 Large Egg
  • 1 Cup Pure Pumpkin Puree
  • 1 Cup Dark Chocolate Chips
  • 1 Teaspoon Cinnamon
  • 2 Teaspoons Pumpkin Pie Spice (my go to is the trader joe brand)
  • Olive Oil or Coconut Oil Spray


  • In a mixing bowl, mix all of your dry ingredients together. Minus the chocolate chips for now.
  • Then add your wet ingredients and mix until all of your ingredients are fully incorporated. Be sure not to over mix the batter. It is ok to have some lumps. Don't you worry about them.
  • Place your batter to the side for a few minutes. Go ahead and grab your griddle pan or non stick pan and place it over medium heat. Thats usually a 4-5 setting on my stove.
  • Spray your pan with whichever oil you are usuing. Now, using a 1/3 cup measure or pouring from a measuring cup drop 2-3 pancakes at a time or however many may fit in your pan. Sprinkle a few dark chocolate chips on top.
  • Allow 2-3 minutes for cook time or until you see bubbles form on the first side. Once this occurs then flip them over and allow 2-3 more minutes for the second side to cook and form nice golden edges.
  • Then, transfer to a baking sheet and place in a warm oven till all of your pancakes are made to keep warm or transfer straight to a plate.
  • Last step is to top these pancakes with a nice slab of butter, maple syrup, and some more dark chocolate.
