Funfetti Snack Cake with Cream Cheese Frosting

Say hello to the BEST snack cake EVER.

Just thinking about it makes me like so happy inside.

One of my favorite recipes to make for any occasion.

It’s packed with that sweet, vanilla, hug in a slice of cake that we all need in our life.

I’ve been making this recipe for years for various things like cupcakes and my cake truffles. It’s just so so so good.

Now, if you’re thinking cake for a snack?

Yes, cake for a snack, because life is short and this funfetti snack cake is darn good. I mean I can’t remember the last time I passed up a slice of cake.

Like, no thanks, I’m not living my best life today.

*LOOK AT THOSE VANILLA BEAN SPECS. I can’t even. *

Yeah right!

Don’t get me wrong, I’m all about that thang called balance.

If you’re offered a piece of cake, please say yes, unless it’s like multiple times a day, ha!

Let’s talk about this cream cheese frosting.

I’ll just be in my kitchen eating this by the spoonfuls with like no shame.

Again, another oh so good part of this cake.

This frosting is what makes this cake.

The balance between the cake and frosting is so perfect. It seems like with would be super heavy, but it’s not.

I like to whip all of the frosting ingredients for a few minutes to make it super airy and light.

Funfetti Snack Cake

Ingredients

  • 1 1/2 Cups All Purpose Flour
  • 1/2 Cup Unsalted Sweet Cream Butter
  • 2 Large Eggs
  • 1 1/2 Teaspoons Baking Powder
  • 1 Cup Granulated Sugar
  • 1/2 Cup Milk or any dairy alternative
  • 1 Teaspoon Salt
  • 1 Tablespoon Vanilla
  • Olive Oil or Coconut Oil Spray
  • 1/2 cup Sprinkles plus more for topping.

Instructions

  • Go ahead and place your oven rack in the center and preheat your oven to 350 degrees fahrenheit. Line your 8X8 baking pan with parchment paper and spray with your choice of oil. I use coconut oil, but olive oil works well too.
  • Next, in a medium sized bowl or stand mixer bowl combine your butter & sugar for about a minute or two until combined well. Then add in one egg at a time. Add the vanilla in and combine.
  • Now, add the remaining half of the dry ingredients (excluding the sprinkles) and add half of the milk. Repeat this step once more.
  • Continue until you have a smooth cake batter. Then mix in your sprinkles. 
  • Bake in your preheated oven for about 40-50 minutes or until your toothpick comes out clean. Toothpick test for the win!
  • Once the cake is completely cooled go ahead and frost it. Then top with more sprinkles! 

Notes

Sometimes I sub out 1/4 cup of granulated sugar & use light brown sugar in place of it. It creates a more dense and flavorful cake in my opinion and I just love it! so don’t be afraid to switch it up.

Ingredients

  • 8 Ounces Cream Cheese
  • 5 Cups Powdered Sugar
  • 1 Tablespoon Vanilla Bean Paste or Vanilla Extract
  • 2 Tablespoons of Milk or Dairy Alternative
  • 1/2 Cup Unsalted Sweet Cream Butter

Instructions

  • In your stand mixer bowl cream the butter and cream cheese together for about a minute.
  • Add your vanilla bean paste or vanilla extract.
  • Now add in your powdered sugar cup by cup. Start your mixer on the lowest setting so you don't powdered sugar everywhere.
  • Add in your tablespoon or two to ensure a creamy frosting.
  • Use immediately or store it in your fridge until you're ready to use it. You can also make this ahead of time and freeze it if you're not gonna use it for a few weeks.

Slice it up. Snack it up. Celebrate it up. Share it up.
